As a student who traveled abroad, much of what I do now was influenced by people and cultures I came into contact with at a young age. I went to Japan for a semester, and worked for a year at a neighborhood sushi bar. I had a great time there, and I wanted to create a similar business of my own as soon as I finished school.
My shop was off to a rough start. The competition was fierce, and business owners came up with quirky ideas to separate their stores from the rest. I was pretty idealistic about the endeavor at the start, but I was grounded when I realized the amount of work that had to go into the place. Well, sushi has to be fresh, or else it wouldn’t sell. The quality of my ingredients also had to be way above par. So I decided to do as my bosses in Japan did – go to markets before the sun rose to get the best stuff. I encountered a large, well-marbled tuna on sale at around five in the morning. I sampled a bit and inspected the fish. It was quite possibly the best tuna I’d tasted here, and I resolved to get the expensive o-toro for my shop.
